I came across this menu for a Burns Night Supper on January 25th 1882 at Sutherlands, New York.

First Course
cock a leeki soup Scotch hare Boiled cods head Fried smelts
Entrees
Curried rabbit stewed Ox tails
Joints
Roast beef, boiled mutton, Singed Sheep's head, Trotters, Haggis, Black and White puddings
Game
Scotch Pheasants, Bread sauce, Duck
Puddings and Pastry
Mince Pie ,Plum Pudding, Apple Pie, Short Cake
Vegetables
Boiled tatties, Baked tatties,(potatoes) Neeps,(turnips) Kail, Carrots.
and , finally
Oatcake, celery, Coffee.
I suppose it actually boiled down to a first course, entree, a main course and a pudding followed by coffee with oatcakes or celery. (Celery with coffee seems odd!)
I wonder how many of the guests and visitors would be the first generation to emigrate from Scotland and so would love this menu to remind them of home!
